A Passo d’Uomo is the first natural wine from the Degli Azzoni Wines group. In the heart of the Marche hills, where time seems to stand still, a wine is born—a wine that tells a story of journeys and discoveries. A wine free to express its strength and authenticity, without compromise. Its name evokes a slow, mindful journey, one that respects the rhythms and traditions passed down by our grandparents.

How We Make Our Natural Wine
A Passo d’Uomo is a Marche Bianco IGT, made from hand-harvested grapes that are carefully selected and washed before processing.
Fermentation with indigenous yeasts takes place at a controlled temperature of approximately 18°C. This intervention, necessary due to climate change, ensures that prematurely ripened grapes can ferment optimally even when cellar temperatures would not normally allow it. No fining or filtration is performed, and no enological aids or sulfites are added.
Every sip carries the story of the land and the delicate balance between humans and nature. Every glass tells of the farmer’s patience and love for the earth. A Passo d’Uomo is an invitation to slow down and rediscover the joy of mindful drinking.
After racking on fine lees, the wine is kept in temperature-controlled tanks until it is transferred under nitrogen and then bottled for further aging.
The result is a deep golden, unfiltered wine with a naturally hazy appearance. Initially, it may seem closed when poured, but with time in the glass, it opens up to reveal a complex bouquet with mineral and balsamic notes. It has a beautiful structure and acidity, perfectly reflecting the aromas detected on the nose.
